I've received a couple of requests for a cookie recipe following last weekend's Fall Fling so I thought I'd start a thread where we could share some of our favorite recipes.  Grab those cookbooks and open up to those dog eared pages or those old handwritten recipes that have been passed down where the ink is fading and post them up!

Enough banter, on to the good eats....

Santa's Snickers Brand Surprises

Here's what you need:

  • 2 sticks butter (softened)
  • 1 cup creamy peanut butter
  • 1 cup light brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/2 cups all purpose flour (sifted)
  • 1 teaspoon salt
  • 1 pkg (13 oz) Snickers brand miniatures
  • 1 pkg (11 oz) Dove brand milk or dark chocolate gifts

Here's what you do: Please note that my wife does not use the Dove chocolate and she bakes @ 350F for 11 minutes.

  1. Combine the butter, peanut butter and sugars using a mixer on a medium to low speed until light and fluffy.
  2. Slowly add eggs and vanilla until thoroughly combined.  Then mix in flour, salt and baking soda.
  3. Cover and chill dough for 2-3 hours.
  4. Unwrap all Snickers miniatures.
  5. Remove dough from refrigerator.  Divide into 1 tablespoon pieces and flatten.
  6. Place a Snickers in the center of each piece of dough.
  7. Form the dough into a ball around each Snickers.
  8. Place on a greased cookie sheet and bake at 325F for 10-12 minutes (baking time and temperature may need to be adjusted if using more than 1 tablespoon of dough per cookie).
  9. Let cookies cool on baking rack or wax paper.
  10. Holiday Hint - Spruce up Santa's surprise by drizzling melted Dove milk or dark chocolate gifts over the top of each cookie.
  11. Think of Cookie Monster and in your head or out loud say "Mmmmmm Coooooookiiiieeeee" and enjoy!

OK. I'm in.  This is a simple but killer cheese cake recipe reluctantly shared by a co-worker over 30 years ago.

1 lb. softened cream cheese

3 eggs

2/3 cup sugar

1/2 teaspoon almond extract

1 cup sour cream

3 tablespoons sugar

1 teaspoon vanilla flavoring

  • Preheat oven to 350F.
  • Leave cream cheese at room temperature until soft.
  • Mix the cream cheese, eggs, sugar and almond extract until creamy and yellow.
  • Pour into 8" pyrex pie plate, and bake in oven for 30-35 minutes.
  • Remove from oven -- cool 20 minutes.
  • Mix sour cream, sugar, and vanilla.
  • Pour over cake and return to oven for 10 minutes.
  • Serve with silvered chocolate on top.
  • Serves 8-10.

Here's three for the price of one - an appetizer, a salad and a dessert. Big Grin

Appetizer: Bourbon Dogs

14 ounces ketchup

1 cup dark brown sugar, packed

1/2 cup bourbon

1-2 packages hot dogs (not the plump when they cook type!)

Stir together in medium saucepan and simmer for 15 minutes.  Cut hot dogs into 1-1/2" to 2" pieces and add to sauce. Simmer at low heat for 45 minutes.  Serves 8-10 and leftover sauce can be frozen for re-use.

*You might want to open the windows or turn on a fan or two while these are simmering.

Salad: Mom's Macaroni Salad

Cook macaroni as directed on package, drain and rinse.

Add:  1 can small shrimp

Two or three stalks of celery, chopped

         Green pepper if desired

        Shredded carrots for color

Mix together: 1 teaspoon sugar

                      1 Tablespoon vinegar

                      1/2 Cup mayonnaise

Pour over warm macaroni and mix well.  Chill.  Serves at least 6 hungry people.

*The secret to this one is having the macaroni still warm when adding the dressing.

Dessert:  Lemonade Pie

1 6-ounce can lemonade, thawed

8" or 9" graham cracker pie crust

14-ounce can sweetened condensed milk

8-ounce container of Cool Whip, thawed

Mix together lemonade and milk then fold in Cool Whip. Pour into pie shell and freeze.  Serves 6 to 8.

And THANKS for the cookie recipe! Those were killer!
